Ingredients
- 2 tbsp soy sauce
- 1 tbsp sambal oelek (or Sriracha)
- 1 tbsp dark brown sugar
- 1 tsp fish sauce
- 3 scallions (dark green parts trimmed and thinly sliced for serving; white and pale green parts thinly sliced for cooking)
- 2 clove garlic (finely chopped)
- 2 tbsp vegetable oil
- 1 lb ground chicken
- salt (to season)
- Bibb lettuce (leaves, for serving)
- tender herbs (for serving)
- lime (wedges, for serving)
Instructions
- Mix 2 Tbsp. soy sauce, 1 Tbsp. sambal oelek or Sriracha, 1 Tbsp. dark brown sugar, and 1 tsp. fish sauce in a small bowl; set aside.
- Trim dark green parts from 3 scallions and thinly slice; set aside for serving. Thinly slice white and pale green parts. Finely chop 2 garlic cloves.
- Heat 2 Tbsp. vegetable oil in a skillet over medium. Cook scallions and garlic, stirring occasionally, until softened (a little color is okay), about 3 minutes.
- Add 1 lb. ground chicken; lightly season with salt. Cook, breaking up with a wooden spoon and tossing occasionally, until chicken is cooked through, 5-7 minutes.
- Add reserved soy sauce mixture and cook, tossing occasionally, until liquid is almost completely reduced, about 2 minutes.
- Serve with Bibb lettuce leaves, sliced scallions, tender herbs, lime wedges, and sambal oelek.
