Ingredients
- 2.2 lbs Costco Pork Shoulder (to be boiled, then cut into small cubes)
- 3.5 cup water (for boiling meat. Just make sure the beef is covered)
- 1 tsp turmeric (for boiling meat)
- 1 1/2 tsp salt (for boiling meat)
- 3 bay leaves (for boiling meat)
- 5 Balls Whole black peppercorn (for boiling meat)
- 2 large onion (finely chopped)
- 1 tsp salt (added after stock, along with green chillies)
- 2 green chillies (slit)
- 2 1/2 tbsp sugar (added after dish is simmering)
- 2 tbsp oil (for frying onions)
- 15 kashmiri chillies (deseeded, for masala)
- 1 tsp cumin seeds (for masala)
- 1/2 tsp peppercorns (for masala)
- 1/8 tsp mustard seeds (for masala)
- 1 tsp turmeric powder (for masala)
- 10 cloves (for masala)
- 1 inch cinnamon stick (for masala)
- 8 clove garlic (for masala)
- 1 inch ginger (piece, for masala)
- 3/4 cup red wine vinegar (for masala (pompeian))
Instructions
- Boil meat with first 5 ingredients (water, turmeric, salt, bay leaves, peppercorn). Bring to a simmer on medium heat, cover and cook for 20 min.
- Remove meat from stock. Strain stock and reserve.
- Grind the masala and keep ready.
- Let meat cool and cut into small cubes.
- Fry the meat (2-3 min) - adds flavor and locks in juices.
- Fry two large onions (finely chopped) with 2 tbsp oil until caramelized and separating from oil.
- Add spice masala and fry.
- Add meat and mix so meat is coated with spices.
- Add stock and mix. Add 1 tsp salt and 2 slit green chillies.
- Add 2 1/2 tbsp sugar after dish is simmering.
- Cover and simmer on low heat for 5 min.
- Heat 2-3 times before storing/serving.
